Apple, Beet, Almond Butter Wrap

 

Whipping up another wrap/sandwich with some of my favorite foods apples, beets, and nut butter! This can be made into a wrap or a sandwich and you can use your favorite nut butter! For these my favorite nut butters are MaraNatha Almond Butter, Peanut Butter&Co Cinnamon Raisin Peanut Butter, and Wild Friends Sesame Cranberry Peanut Butter! I love the almond butter for the wrap as it is a little runnier and the fall flavors of the other two peanut butters complement this sandwich perfectly!

 

Apple, Beet, Nut Butter Wraps

Makes 1 serving

1 large kale leaf or green of choice (used a large purple kale leaf)

1/2 an apple, sliced

2 beets, cooked, cooled, skins removed, chopped or sliced (can use pre-cooked)

1-2TBSP nut butter (used MaraNatha Almond Butter)

 

Wash your leaf and if it has a stiff woody vain like my purple kale did cut out the hard part so your leaf can be rolled. Lay your leaf on your plate and later with apples, beets, and drizzle your nut butter over top. If your nut butter is thicker you can spread it on the inside of the leaf as well. Roll and enjoy!

Apple, Beet, Nut Butter Sandwiches

Makes 1 serving

2 slices of bread (used Food For Life Sprouted Ezekiel Bread)

1/2 an apple, sliced

2 beets, cooked, cooled, skins removed, chopped or sliced (can use pre-cooked)

1-2TBSP nut butter (used Peanut Butter & Co Cinnamon Raisin for one shown and also tried with Wild Friends Sesame Cranberry)

 

Assemble your sandwich by spreading a slice with nut butter, topping with apples, beets, and second slice of bread. Enjoy!
