Smoothie bowls aren’t new to us but are one of the things we miss most after spending a few weeks in California this summer. Little did we know that there are a lot of smoothie shops in California and they make some of the best smoothies and smoothie bowls! The girls found one in particular just called a kids smoothie bowl that they really liked so when we got home it was one of the first things we had to recreate. We knew what was in it so it wasn’t too hard but of course I didn’t think on the first attempt we would get the right combo having to tweak more or less berries or bananas. Well guess what, the girls said that first version I made was even better! So good they gave it an A+, two thumbs up, and said I had to share it! Not sure what to call it I had to go with the girls on this one and go with A+ Acai Bowl!

Perfect for breakfast, afternoon snack, or pre/post soccer (or gymnastics, but traveling soccer is life in our house now) snack, it only takes 4 ingredients to make and you can customize it with your choice of toppings. The girls picked banana slices and strawberries and S usually goes with her favorite chia seeds where A went with granola this time or she goes with muesli. Made with only an acai smoothie packed, frozen fruit (bananas and strawberries) to make it extra thick, and apple juice it’s packed with vitamins, minerals, antioxidants, and whole food nutrition. You can find the acai smoothie packets in the frozen section at Whole Foods. Our Costco use to also carry them as well as the acai juice which I would freeze into ice cubes but right now ours isn’t carrying either unfortunately. We always have frozen bananas and strawberries on hand, and we picked up 100% apple juice to use. If you want you can also try coconut milk or even coconut water in place of the apple juice if you are worried about sugar (natural sugars in fruit) but as the girls enjoy these for breakfast or before or after soccer I don’t see it as an issue. Natural sugars, like those found in fruit, is not something I worry about with the girls or in general, we eat so much fruit especially in the summer. So as we soak up these last days of summer before school starts next week we are going to enjoy all the smoothie bowls we can! I have a feeling they won’t taper off until the snowflakes start to fall, but I could be wrong maybe we’ll just have to tweak them to more in season toppings and variations.

A+ Acai Bowl
Makes 2 servings
1- 3.5oz acai packet (Sambazon)
1c apple juice (Whole Foods 365 Organic)
2 frozen bananas, broken or cut into chunks
1c frozen strawberries
toppings of choice, shown with bananas, strawberries, chia seeds, and granola (Mama Chia)

 

In a Vitamix, or high-speed blender with a tamper tool if you want to make it really thick, blend together acai packet, apple juice, strawberries, and bananas until thick and smooth. Top with toppings of choice and enjoy!
