All I can think about is Acai Smoothie Bowls! Not sure if it is my upcoming trip(s) to the sunny state of CA or the slightly warmer days and sunshine we’ve had here lately. It’s clearly still winter out but I’m eating like it’s spring. Keeping the oatmeal in rotation while it’s cold and A is still requesting it almost daily, but really the muesli bowls are mourning so my love for those and acai bowls seems to be what I’m spooning. As you may have seen on Instagram in this pic below I even combine the muesli and acai love!

Smoothie bowls are one of my go tos for breakfast, lunch, snack, and a majority of the time post workout. I first fell in love with acai smoothies back in 2007 when Caribou came out with an acai smoothie. I remember a barista at the one I use to frequent by work telling me I had to give the new drink a try and I fell in love. Than they stopped carrying them and I couldn’t seem to find acai and stopped looking. Than Whole Foods started carrying drinks and the frozen acai packets. I use the acai powder when I can’t get the juice or frozen pouches. Recently Costco started carrying Sambazon Acai Juice again which is maybe a reason why all eyes are back on the acai bowls here.  Acai is a delicious low-glycemic berry that has some amazing healthy benefits, it isn’t just another beautiful berry. The deep bold purple hue of acai indicates that it is an abundant source of powerful antioxidant polyphenols and flavonoids. It’s is loaded with healthy monounsaturated and polyunsaturated fatty acids, protein, fiber and other essential nutrients that make the acai berry one of the most nutritious foods on Earth. Sometimes I do like to do half acai and half non dairy milk as I did in most of the versions pictured. I add protein chocolate or vanilla but love the combination of chocolate and berries so usually tend to go with that and then frozen berries and bananas to make it extra thick. If I’m making it without the protein I will add in more frozen fruit, usually bananas. Than toppings are all about what I might need or am feeling at the moment so I might add some energizing spirulina powder, nuts or seeds, fresh or dried fruits, nut butters, cacao nibs or chocolate, the list just goes on. I really wanted to add a few other photos but some aren’t very photogenic and well it’s a struggle not to just eat it. One of my other favs that didn’t make the photo cut is topping it with granola or museli and nut butter! I think that along with all the fruits and a little something crunchy are up at the top. While my husband hasn’t hopped on the smoothie bowl train, yeah not sure what his problem is since the girls and I love them, he does like acai smoothies which are almost always on the go so I guess I can see sipping instead of spooning except for he misses out on all the toppings! Just hoping that Costco keeps the jumbo bottles of acai in stock, never fails we have something on our weekly list and then go there one day and it’s gone. Now that I’m back on an acai kick time to revisit some old recipes, I can’t believe I haven’t posted any acai recipes in 2 year but hey I think of it like a broken record, I use it until I play it out. Or sometimes just think I’m posting or have over posted something and there is always that balance trying to decide what to post and what not to as I only post a fraction of what I make and we eat.

Acai Smoothie Bowls
Makes 1 serving
1/2c acai juice (Organic Sambazon Acai Juice)
1/2c coconut milk, or more acai (So Delicious Unsweetened Almond Milk shown)
1 scoop chocolate protein powder (Vega Team Clean Protein, Chocolate)
1/2c frozen blueberries
1/2 frozen banana

Top with anything you want!
Granola or muesli, nuts or seeds, fresh for dried fruit, nut butter, coconut, superfood powders, chocolate, the list goes on.
(used Navitas Naturals cacao nibs, chia seeds, and goji berries, spirulina, brazil nuts, Bare Chocolate Coconut Chips, and bananas in the versions shown)

 

In a Vitamix, or high-speed blender, blend acai juice, coconut milk, protein, and frozen fruit until thick and smooth using tamper if needed. Spoon or pour into a bowl and top with all the toppings. Enjoy!
