Acai Chia Pudding topped with Blueberries

I love chia it is so filling and good for you. Add acai and top with blueberries and it is packed full of antioxidants! I love to make this for breakfast but could be eaten for a snack or dessert as well.  It is quick and simple and if you are looking for something different in the morning for on the go this is perfect because you can make it the night before and grab and go in the morning!


Acai Chia Pudding

1 serving

3/4 Acai Juice (used Organic Sambazon Acai Juice)

3 TBSP organic chia seeds

1/4c blueberries (optional) or other fruit (mango, strawberry, and banana are also delicious choices)


Mix chia seeds and juice in a bowl and stir a minute or so until there are no clumps of dry seeds. Place in the refrigerator for 4 hours or I put it in there overnight. Leaving it longer will make it thicker. Remove from the refrigerator and top with blueberries or whatever you desire. Enjoy!
